Chanticleer Royale 19
Created to ring in the New Year of 2009, it is light and effervescent, the perfect toast. Named in consideration of an article published in the “The New Orleans Daily Picayune, February 2, 1843”, which suggested that the term ‘cocktail’ was rather vulgar and inappropriate for proper society, so an order of ‘a tail of the rooster’ or “une queue de Chanticleer” was suggested. Russian Standard Original Vodka shaken with fresh mint, lime juice, white sugar syrup and topped with Cloudy Bay Pelourus NV Sparkling
Gilded Lily 19
A slight twist on a popular drink of recent times, this is fruity yet tart and tastes surprisingly like fresh grapefruit juice. Try this if you’re a fan of the Cosmopolitan, it is delightfully refreshing yet not filled with sugary liqueurs. Beefeater Gin shaken with Amaro Montenegro Bitters, passionfruit, lemon and orange juices
New Jersey 19
With this one we introduce the latest addition to our bar team, Reece Griffiths. While there’s a cocktail for each of New York’s five boroughs, travelling the turnpike the shores of Joorsy receive far less recognition. We present this delightful fruit and spice concoction that will have you fist pumping like a champ!

A traditional aperitif from the Veneto, the home of the famous lovers and Prosecco. This Spritz has a light touch of bitter that is perfect for an evening refresher or before dining. Aperol Bitters and Antonini Ceresa Prosecco charged with seltzer

Black Gilboa Swizzle 19
From the depths of tropical Barbados, where plantations doth lie in the shadow of the forbidding Mount Gilboa, exists the Earth’s oldest continuously operating Rum distillery. Born from the traditions of this foreign land is this islander cocktail, which is sure to awaken “the ghost who walks” in the spirit and in you. Mount Gay Extra Old Rum swizzled with House Coffee, Chocolate and Banana Bitters, fresh sugar cane and lime juices
Negroni 19
Supposedly named for an Italian count in the 1920s, who received this wonder upon requesting a new drink from his bartender. Being the modest chap that he was, he named the drink after himself and proceeded to order it throughout Italy until it was known, and thank the stars he did. Beefeater Gin stirred with Martini Rosso Italian Sweet Vermouth and Campari Bitters
Negroni Sbagliato 18
Usually when a bartender pours the wrong ingredient the drink goes down the sink, but sometimes it is pure genius: such as the Negroni Sbagliato, or ‘Wrong’ Negroni. Antonini Ceresa Prosecco stirred with Martini Rosso Italian Sweet Vermouth and Campari Bitters
Apples and Oranges 19
We compared apples and oranges and decided on apples. Using one of America’s oldest spirits that is made from distilled apple cider, we have crafted a very light thirst quencher filled with delicate nuance and appetising aroma. Hawaiian 20
Using the latest cooking techniques we have ‘washed’ this Rum with bacon for a beautifully rich flavour. We then matched it with the classic combination of pineapple and dried it with some vermouth. While there is no cheese in the drink, it is certainly cheesy but so good. Aloha! Bacon flavoured Cruzan Dark Rum stirred with Martini Rosso Italian Sweet Vermouth, Peychaud’s Bitters, oregano and pineapple
Jam 20
While most ‘strawberry Martinis’ are vulgarly over sweetened diabetes inciters we have crafted a version that has all the delightful hedonism of strawberry while retaining the refinement of a true Martini. Jam out…TMD Eaux de Vie Fraise stirred with Punt E Mes Italian Aromatised Wine
Rose Petal 19
A V R classic from day one, this is a lady-killer. A long pour of Gin is enhanced with a touch of rose and lovely lychee. Topped with a rose petal, this will impress. Beefeater Gin shaken with lychee juice and rose syrup
Cowboy Cocktail 20
This was created by our Bar Manager, Lee Potter Cavanagh, for the Australian Bartender Magazine Bartender of the Year Competition, National Final, 2009. A luxurious mix that will tantalise the taste buds and leave you giggling, giddy up! Chairman’s Reserve Dark Rum shaken with El Señorio Joven Mezcal, House Maraschino Liqueur, Angostura Orange Bitters, lime juice, agave water and egg white

Charlie’s Caribbean Tipple 19
This superb ‘tropical style’ drink took out first place honours in the 2009 NSW Drambuie cocktail competition. Created by one of The Victoria Room’s longest serving bartenders, Nurus ‘Noz’ Safa, it is fresh and smooth, perfect for a balmy evening. Appleton VX Dark Rum shaken with Drambuie Liqueur, Angostura Orange Bitters, almond syrup and lemon juice
Desert Daisy 19
This one was created by our bar star, Jess Arnott. Having honed her skills over the past few years in London we’re grateful to have her back in Australia and to have this lovely floral, citrusy ode to tequila. Cazadores Blanco Tequila shaken with Angostura Orange Bitters, white grapefruit juice, agave water, orange blossom water, cucumber and cracked pepper
Sugar Daddy 19
This is for those who prefer to take their alcohol masked with fruit and juice. Refreshing and light, who wouldn’t want a sugar daddy? Russian Standard Original Vodka shaken with Peach Liqueur, fresh mint, sugar cane and lime juices
Viking’s Horn 20
Using the Scandinavian tipple Aquavit, which is flavoured with caraway seeds, we have created a great pick me up. Light, citrusy and fresh, this is what a Viking would have in the morning. TMD Aquavit shaken with Amaro Florio, lemon juice, egg white, white sugar syrup and fizzed with seltzer

Honey Bee 19
If our restaurant’s Rich Apple Tarte Tartin didn’t finish you off then read no more. Rich, velvety and sweet, you can almost hear the springtime drone of bees.
Sauza Blanco Tequila shaken with honey, egg white, cloudy apple and lemon juices
Kentucky State Mess 20
This delectable concoction is almost a liquefied strawberry Meringue, and might be what happens when a college boy from Eaton transfers to Kentucky State University. The light spice of the Bourbon marries wonderfully with the bitter-sweet strawberry and the tart balsamic. Makers Mark Bourbon shaken with strawberry, balsamic vinegar, egg white and white sugar syrup
Ron Rojo 19
An uplifting mix that combines the rich flavours of the Rum with the spice of the Vermouth and the bitter kick of the Espresso. There will be no heavy eyelids after one of these. Cruzan Aged Dark Rum shaken with Dubonnet French Aromatised Wine, espresso, orange juice and flamed with Angostura Bitters
Coffee Cocktail 19
When this drink was the height of fashion in the middle of the 19th century, eggs were considered a luxury item. Consuming one in a drink was the height of extravagance as well as being a tasty method for binding flavours together. Despite the name this drink contains no coffee whatsoever. Remy Martin VSOP Cognac shaken with McWilliams Tawny, white sugar syrup, a whole egg and a touch of nutmeg

Pisco Snap 19
Clairet was English slang for a dark rose style of wine produced in Bordeaux until the end of the eighteenth century. When Clairet is added to a sour drink it becomes a ‘snap’, it makes it look fine and works very well with the earthy flavours of Chile and Peru’s brandy, Pisco. Payet Pisco Quebranta shaken with Clairet, lemon juice, white sugar syrup, egg white and flamed with Angostura Bitters

We prefer our Blazers quite traditional, however like many mixed drinks, ingredients in this potation are as variable as the fortunes of stockbrokers. We are happy to tailor this drink to your favoured dark spirit, be it Brandy, Rum, Tequila or Whisky in any of its forms. Rittenhouse Rye Whiskey flamed with Angostura Orange Bitters, Sugar, orange and lemon zests
Jiminy Cricket 19
A delightful way to finish your evening, the Scotch is softened with a touch of sweet chocolate and freshened with a hint of mint. Head outside after a couple of these and wish upon a star, anything your heart desires will come to you. Famous Grouse Scotch Whisky stirred with Branca Menta Bitters and White Crème de Cacao Liqueur
White Rabbit 20
“If I had a world of my own, everything would be nonsense. Nothing would be what it is, because everything would be what it isn't. And contrary wise, what is, it wouldn't be. And what it wouldn't be, it would. You see?” Lewis Carrol, Alice’s Adventures in Wonderland, 1865. This modern take on the milk punch turns tradition into nonsense, with fantastical results. VR Punch Bowl (Serves 4) 45
As Flor de Cana has appointed our Bar Manager, Lee Potter Cavanagh, Australia’s Ambassador of Punch, we thought we’d celebrate with our very own punch bowl. Mixing fresh fruit and spice with the beautiful Nicaraguan Rum, this is one to be enjoyed with friends. Flor de Cana Grand Reserve Dark Rum built with black tea, lemon juice, agave water and served with fresh fruit and spices
Batanga 11
Batanga, Spanish slang for someone thick in the middle, was the nickname of a regular of Mexico’s famous La Capilla bar. The 83-year-old owner/bartender, Don Javier, created this refreshing mix in 1961. Cazadores Blanco Tequila and coca cola with a salt rim
Créole Ti Punch 10
A popular way of serving Rhum Agricole in the French Caribbean islands, this makes a delightful aperitif or afternoon tipple. Served ‘chacun prépare sa propre mort’, roughly ‘each prepares his own death’. Accompanying the traditional condiments is fresh sugar cane juice from our cane press. Saint James Blanc Rhum Agricole served neat and on the side, lime wedges, sugar cane juice and white sugar syrup
Cuba Libre 9.5
Created in the year 1900 in Cuba as a toast to Teddy Roosevelt and his “Rough Riders” who helped ‘liberate’ Cuba from the Spanish. By combining Cuban Rum and the quintessentially American Coca Cola, this drink evokes the spirit of celebration and solidarity. ¡Por Cuba Libre!

Burnt Fuselage 20
Straight out of Harry MacElhone’s Barflies and Cocktails, 1927 it was contributed by a regular at his ‘New York Bar’ in Paris, a Philadelphian named Chuck Kerwood. Apparently known as the “wild man of aviation”, Chuck considered the Burnt Fuselage a “stiff steadier”. We think we know how he got his nickname. After polishing off one of these “your own fuselage will be warm, to say the least”. Remy Martin VSOP Cognac stirred with Grand Marnier Liqueur and Noilly Prat French Dry Vermouth
Red Hook 20
This one is a Modern ‘twisted’ classic, created by Enzo Errico at one of New York’s finest cocktail bars, Milk & Honey circa 2005. With Brooklyn in mind he made a tribute to the area by the river known as Red Hook. This drink is delightful, a touch more bitter than a Manhattan and a smidgen richer than a Brooklyn. In these ways it probably does accurately represent someone from Red Hook. Wild Turkey Rye stirred with Punt e Mes Italian Aromatised Wine and House Maraschino Liqueur
Alamagoozlum 20
Supposedly created for financier, philanthropist & banker of a bygone era, J.P. Morgan, this drink was published in 1939 by Charles H. Baker Jr. containing a veritable mouthful of ingredients. It is equally as ambitious a mix as Morgan’s aspirations and will sate any refined palate with a plethora of flavours.
Bols Jong Genever shaken with Appleton VX Rum, Yellow Chartreuse Liqueur, Cointreau Liqueur, Angostura Bitters, egg white and white sugar syrup
Zombie 20
This drink first rears its head in the 1930’s, created by Ernest Raymond Beaumont-Gannt, later to become known as the god of tropical drinks, Donn Beach. By the 1940’s it was popular enough to end marriages. The wife of wealthy Airlines executive, Mark T. McKee, testified in her divorce suit that he once drank eight zombies to win a drinking contest with a Peruvian Consul and then hopped around the nightclub singing he was "a little prairie flower, growing wilder every hour," United Press, 1942. Our secret blend of Rums shaken with white sugar syrup, passionfruit, lemon, lime and grapefruit juices
